This Japanese spice mix is also known as seven colour or seven flavour chilli pepper. Its seven ingredients are red chilli pepper, sansho, roasted orange peel, black sesame seeds, white sesame seeds, hemp seed, aonori and poppy seeds. It's used in cooking and as a garnish for soups & noodles. It's most commonly sold now as a pre-mixed spice blend. Originally it was made right in front of the customer and they requested specific quantities of each ingredient depending on how they liked their blend. This practice can still be seen today at Japanese festival stalls.

Heritage of the dish

The consumption of meat was banned in Japan from the Asuka period (6th century) to the early Meiji period (mid 19th century). This was mainly due to Buddhist religious practices and only a select few species of wild birds were allowed to be eaten for nutritional value for medicinal purposes. Soon after Yakitori street stalls began to appear and were linked to a rise in popularity of the game fowl stew 'Shamo'. Meat was expensive at the time so the yakitori skewers were originally made with offcuts and innards. Although yakitori literally means 'roasted birds' the stalls used whatever meat they could find making barbequed beef and pork innards common variations of yakitori despite the name.

Yakitori is one of the most well-known Japanese dishes and the name "yakitori" translates to "grilled chicken" in Japanese. Yakitori is typically made by marinating bite-sized pieces of chicken in a flavourful sauce, then skewering and grilling them over charcoal. Most popular way of cooking Yakitori is to alternate between bite sized pieces of chicken thighs and Japanese leek which is much thinner than British leek.

There are many yakitori restaurants in Japan which are like the equivalent of a pub here in the UK as opposed to a restaurant. People go there to enjoy a cold beer whilst enjoying some yakitori skewers on the side. The only meat served in Yakitori restaurants is chicken. Every single part of the chicken is prepared skilfully and served on skewers with either just simply salt or glazed with a variety of sauces depending on the cut of meat. Yakitori restaurants are also known to serve chicken sashimi which is surprisingly delicious.

My yakitori skewers are made using juicy chicken thighs drizzled in a sticky, sweet teriyaki sauce. Instead of using leek, I have used crunchy colourful peppers alternating with chicken. They are paired with a fresh soba noodle salad. Soba are a type of Japanese noodles made using healthy buckwheat flour. These two dishes are a match made in heaven.
