My Indian Summer BBQ feast is the perfect sharing menu which has a collection of delicious recipes to cook and enjoy outdoors while you experience authentic Indian marinades and flavours. Everything that I’ve included in this menu is BBQ or grill friendly but can also be cooked in an oven in case you’re not so lucky with the British weather.

Indian BBQ, also known as tandoori cooking, is a popular style of cooking that involves marinating meats and vegetables in a blend of spices and cooking them in a tandoor, a traditional clay oven that is widely used in India. I have included my signature Tandoori chicken recipe which I hope you will love. Tender chicken malai tikka is cooked in a creamy marinade with fragrant cardamom and infused with mild heat from green chillies. Whereas, Paneer tikka has a bold marinade that is made using some typical Punjabi ingredients like mustard oil, fenugreek leaves, kashmiri chilli with gram flour that helps hold the marinade together. Lamb seekh kebabs are skewered and cooked simply on a barbecue making them great starters or as a filling for any bread. Remember to prep and get ahead with this menu so everything gets a chance to marinate for at least an hour. Chill the spiced mince in the fridge in advance to take in the flavours and firm up.
