Irini has used her menus to highlight some lesser known Greek cheeses. These include manouri, kefalotyri, graviera and Greek soft cheese. All of these cheeses are produced in Greece and come to the UK through a speciality Greek supplier. Some of the cheeses in Irini's range carry an EU Protected Designation of Origin (PDO). This is an award given to high quality food products (like champagne) which once awarded can only be produced using specific methods of production in a specific geographic area.
